Lemony Herbed Quinoa Salad

A refreshing and tasty salad! You can add yummy things to it like grilled chicken, steak, or seafood. 
*Tip! the salad will improve in flavor if made ahead of time!

INGREDIENTS
  • 2 cups water
  • 1 cup quinoa
  • 1/4 tsp sea salt
  • 1 tsp Dijon mustard
  • 1/4 cup fresh lemon juice
  • 1/4 cup finely chopped fresh mint
  • 1/4 cup finely chopped fresh cilantro
  • 2 Tbsp grapeseed or safflower oil
  • 1/2 cucumber, peeled and diced
  • 1/4 sweet red pepper, diced
  • 1 stalk celery, diced
  • 1/2 cup diced red onion
*sea salt & freshly ground pepper to taste

  2. this looks really good! and sorry i don't know you but i have to correct you because quinoa is actually a complete protein in and of itself-- so this dish is good to go all on its own! can't wait to try it. the flavors sound delicious together.
